Brown rice and beans should always be in your pantry. There are so many interesting dishes that you could whoop up with this combo. They are also packed with protein and fibre and extremely budget-friendly. You can make a big batch to eat over a few days.
Ingredients
1 onion, diced
2 tsp crushed garlic
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cooked brown rice
1 can black beans, do not drain
1/2 tsp smoked paprika
1 tsp dried oregano
1/2 tsp cumin
1/2 tsp turmeric
2 bay leaves
Salt & pepper to season
