Mealie Meal Porridge

Mealie meal is a firm favourite in many African homes. Though toppings may change depending on preference, the creamy and smooth morning pap is a true definition of home. We ate our morning pap, all cramped up in my grandmother's room, mouths filled with pap and neighborhood gossip. I love mealie meal porridge and I'm glad my toddler enjoys it now too. And yes, 100% vegan:)
Ingredients
1 cup of maize meal (you can also substitute with polenta or cornmeal)
3 cups of water
1 cup of plant-based milk ( you can use almond or soy milk)
Vegan margarine
½ teaspoon of salt
Sugar
Method
Place water in a pot, add salt and boil
Mix maize meal in a separate dish with cold water making a smooth paste
Add the paste to the boiling water, stirring continuously so that no lumps form for about 10 minutes
Add milk and allow to thicken and simmer over low heat until cooked
Remove the pot from the heat
Serve hot in a bowl and top with margarine and sprinkle of sugar
