Tofu Avo Salad Bowl

This fresh, crunchy salad of baby spinach, tofu, avocado, carrot, cucumber, with a creamy vegan-mayo soy dressing is a great meal for lunch or dinner. You could add cooked brown rice or pearl barley if you want something extra filling.


Salad Ingredients
1 large grated carrot
1 cup baby spinach
1/2 cup diced cucumber
2 stalks chopped green onion
100g diced tofu (sauté for 8 minutes in olive oil, garlic powder,curry spice, mixed herbs, salt, pepper)
1 tbs sesame seed
Dressing Ingredients
2 tsp vegan-mayo
2 tbs soy sauce
1 tsp maple syrup
1 tbs extra virgin olive oil
Method
In a large bowl, add spinach, grated carrot, diced cucumber, avocado, green onion and cooked tofu. Drizzle with dressing and sprinkle with extra toasted sesame seeds.
