Vegan Flapjacks!

Flapjack/ Pancakes weekends is a tradition that our kids especially enjoy. I'm happy to provide that delicious luxury for them - especially because there are now quite a few vegan/healthier flapjack pre-mixes options available in the market. I have a few favourite brands that I've included below. For the flapjacks pictured here, I use the Flapjack Premix from Health Connection, which is the quickest and easiest way to whip up some homemade vegan flapjacks. "The premix makes 30 crumpets each with a whopping ~5 grams of plant based protein. Sweetened with xylitol and no added sugar, they’re also suitable for diabetics. A sweet treat for breakfast or a comforting dessert without the calories!"


I usually just use the recipe provided at the back of the packet and amend it slightly by using different plant milk (soya/almond), different toppings (blueberries, strawberries, coconut flakes etc.). I always drizzle a very generous amount of raw maple syrup!
